    Try craigslist- I’m always finding brand new boxes of jars or old ones (which you can buy new lids for if the jars are sound) posted.

    I also occasionally see a newer pressure canner too. Large pots for water bath canning are not very expensive but a good pressure canner can be pretty pricey, even if bought used. You could get supplies for water bath canning if you search craigslist carefully for under 50$. Start with that and see how you like it before investing in a good pressure canner.

    THe Mason Jar with Parafin wax poured over the the top of the jar with a well placed piece of butchers string when pulled would cut the wax seal. As a kid i must have eaten a few pounds of wax. The quality though of the home preserves were top droor. Im Glad to see your vid with the food handlers guide as to bacteria. Come to think of it alot of the times in winter for no reason the whole family would get a severe case of the trots.

    anyone who wants to know more about home-canning may also find the book “Canning & Preserving for Dummies” useful. it teaches how to make your own jams and jellies, canned veggies, and dried snacks. How to tell the acidity level of the food pick etc

    This is the most lucid explanation of the canning process I have seen. Several years ago, a relative gave us a jar of strawberry jam she had canned. It was the most delicious jam I had ever tasted. So I bought a highly rated book on canning, and the booked confused me to the point where I gave up on the idea. It probably is a good book, but I simply must know some basics first. And your video, though easy to understand and follow, covers a lot more ground than the book. So thanks!

    Just wanted to point out that foods are preserved through heat sterilization. Pressure cookers can achieve higher temperatures than boiling alone, and thus kill bacteria/fungi that might otherwise survive. The “vacuum” produced by the cooling gasses only seals the container shut, so no organisms can enter the jar/can.

    Peppers are a low acid food and must be processed with a pressure canner.
    However, peppers & other low acid foods made into pickles or relishes containing vinegar maybe be processed via the boiling water bath method.

    If by cucumbers you mean pickles made with vinegar - yes they are safe processed by the BWB method.
    Pickles are a high acid food.

    Follow the recipe exactly & you’ll have no problems.
    The sealing compound is the red stuff on the underside of the lid that goes on the jar.
    You need a jar,lid and screw band for each unit of food.
    Process the pickles in a BWB canner.
